We grew up very poor. Of course we didn't realize it at the time, but looking back it's easier to see how hard my folks had it. At least 3 times a week we would eat pinto beans, cornbread and stewed potatoes. Once we had eat from them, the next time you saw the leftovers they were potatoe cakes. I still love this meal today! Only difference is we usually add a side of kraut and weenies with the beans and taters. I'm getting hungry already!!!

My wife chops 'em up, and fries them in our cast-iron skillet...the "magic skillet" we call it (because everything cooked in it tastes to good, it must be magic!). YUM!

Wash'em and chop them into chunks.

Place on nonstick spray prepared baking sheet along with bacon and garlic.

Baked until brown.

Seve with sour cream and your favorite shredded cheese.

When you mixed up potatoe cakes next time .Try putting one egg in the mix and mix it in to .It will make them more fluffy and better i think

Good tater recipe .Holly Taters. Cut up 6 medium taters in wedges .Take half cup of self rising flour .half cup of Parmesan cheese and 1 tablespoon of fried chicken seasoning. Put everything in a empty bread bag and shake well .Put on a baking pan with a half cup of cooking oil on it .Bake at 450 till done and golden brown .UMMMM GOOD

layer sliced potatoes and sliced onions and butter, salt and pepper between layers, cover and microwave 15 minutes, tastes like fried potatoes, but easier and no messy fryin pan to clean up.! very good, too.

Baked potatoes. Mashed potaotes. Leftover mashed potatoes made into potatoe cakes with some onion soup mixed in. French fried. Chipped. Dipped. Scalloped. Really doesn't matter. We like our spuds.

We like 'em slices thick like chips. Put in flat baking dish. Cover with extra virgin olive oil. Cover with cheese of choice. Bake @ 400 until brown and cheese is melted. Tip potatoes take longer than cheese so you may put potatoes in for about 20 mins and then add cheese. Yummy!
