Chicken Chili
1lb chicken breast tenders
1 can diced tomatoes
2 cans dark red kidney beans
3 cans of tomato soup
2 cups of tomato juice
1 onion diced
1 package Mccormick original chili powder
garlic salt
onion powder
2 Tsp worcestershire sauce
salt
pepper
Cook chicken in skillet until done, I cook chicken with a little salt, garlic salt and onion powder, shread chicken with a fork, add to large pot with all the other ingredents. Add salt, pepper, garlic salt, onion powder to your own taste. Simmer on low for 1 hr.
I serve mine with low fat shredded cheese, fat free sour cream and tortilla chips. If you are wanting to cut more calories and fat you could leave the tortillas off.

1. We like Gorton's Grilled seasoned Tilapia. You find it in the freezer section. Comes in a box with 2 small fillets. Weight Watchers points is only 2 points per fillet. Bake for 20 minutes on 400 degrees. Good with a baked sweet potato (sprinkled with splenda, cinnamon, and light butter spread) with green beans, grilled asparagus, or a tossed salad. (We use light ranch dressing)
2. Low fat pizzas (serves one)
1 low fat, whole wheat tortilla shell (sometimes you can find 96% fat free shells)
garlic powder
1/4 cup pizza sauce
1/4 cup shredded low fat mozzerrella cheese
turkey pepperoni slices or canadian bacon slices
sliced onions, green peppers, tomatoes, mushrooms, or veggies of your choice
sprinkle of parmesan cheese, more garlic powder if you like it
Preheat oven to 400. Sprinkle garlic powder on tortilla shell and bake for about 3 minutes. Remove from oven and create pizza, starting with pizza sauce, ending with cheeses. Bake until cheese is bubbly and shell is light golden brown. If you are doing weight watchers, this is about 6 points.
3. Canadian Bacon is a great substitute for bacon and seasons green beans well. Land-O-Frost brand is almost fat free. This is good on an English muffin with an egg white and lowfat cheese.

I'm making Chicken Chili tonight for supper instead of using beef. If you want the recipe let me know. If you already have a chili recipe you like just use chicken breast instead of beef.

Does anybody have any good low fat recipes that they would like to share? The doctor has put me on a low fat diet. thanks
