I just made this a little while ago...I've never cooked or eaten a spaghetti squash till today...Deeeeeelish!!!!!

Also, the squash strings are good with butter and brown sugar or honey. A dash of cinnamon or allspice is also a tasty addition. A filling dessert without all the calories (except for the sugar, honey, and/or butter). Splenda also works as a sugar replacement.


It's a lot like acorn or butternut squash, but better.

I watched Biggest Loser a few weeks ago, and one guy mentioned that he liked using Spaghetti Squash in place of pasta. I tried it recently, and it was really good, but without all the calories!

It's real easy to do. Preheat the oven to 375. Cut the squash in half lengthwise, and put it face down on a baking dish. Add about 1/2" of water, and cover it with aluminum foil. Bake for 45 minutes, or until it's done.

To check if it's done, just take a butter knife and push it into the center of the squash. If it slides through easy, then it's done, but if there's some resistance then cook it a little longer.

After it's done, turn it over and cover it back with foil, then bake for another 15 minutes.

Take it out and let it cook for a few minutes, then use a spoon to scoop out the seeds. Now, take a fork and pull the strands of the squash away from the peel and put them in a bowl. It will look a lot like cooked noodles.

A 2 pound squash should be enough for about 4 servings. That's 1/2 pound of pasta each, so that's really a pretty big meal. But where 1/2 pound of noodles would be around 500 calories, this is only 80 calories.
