I use a spice cake mix and make three 8" round layers. Then I cut each layer in half to give me six

thin layers. I make my own apple mixture using dried apples, but if you don't want to do that you can mix equal parts of applesauce and apple butter for the apple mixture. It's a pretty good facsimile. Also, you can use the applesauce/applebutter mixture and layer it over vanilla wafers, repeating the layers kind of like a banana pudding. Let it sit in the frig til the apple mixture kind of soaks into the vanilla wafers (overnight). It is a quick, easy dessert that is similar to an apple stack cake.

My mother made stack cakes all the time. So good!! I will get her recipe from my sister and post it.

Remember to roll out the dough really thin when doing a stack cake.

A variation of the stack cake doesn't use molasses or ginger in the dough and I like it better. The secret, I think is the recipe for the apple sauce.

Thanks, whitehawk! This sounds like what I tasted years ago at a birthday celebration. It was a 'secret family recipe' but this sounds like what I had, and it was sooo gooood!!!

This recipe is from the Mountain Heritage series from Berea College and is the authentic thing. There's also a history on this site which explains that this was originally a wedding cake. If you don't have dried apples (you can buy in most super markets if you can't get home dried ones), then I would not suggest trying the recipe as it will be wet.
