Loaded Potato Soup

Try this one, my family loves it. Simple to make and delicious!

This is for 2 servings (it's the way the recipe came)

Baked Potato Soup with Bacon

1 lb cubed baking potatoes

2 Cups milk

2 tsp butter

1/2 tsp salt

1/4 tsp pepper

1/4 Cup sliced green onions

4 TBsp crumbled cooked bacon

Place potatoes in medium saucepan, cover with water and bring to a boil. Cook 15 minutes. Drain and mash to desired consistancy. Add milk, butter, salt, pepper. Stir well. Cook over medium heat until thoroughly heated. Ladle into bowls and top with bacon and onion.

(I like to add shredded cheese on top of my bacon and onion because I don't like the cheese based potato soups)

German Potato Soup
2 TB butter
1 Tsp.garlic
1 bunch green onions, chopped
1 stalk diced celery
6 cups boiled diced potatoes
32 ounces beer
1 TB sugar
1 TB chicken bouillon
64 oz. chicken stock
Few TBS flour to thicken
4 cups cream
salt and pepper to taste

Saute garlic in butter for 1 minute, add vegetables and
saute for 3-5 minutes or until tender.
Add potatoes and beer and bring to a boil.
Mash potatoes against sides of pot.
Add sugar, stock, boullion and salt and pepper.
Add flour and stir until thickened.
Add cream, stir and serve.

Hearty Potato Soup
6 medium potatoes peeled and sliced
2 carrots diced
6 celery stalks diced
2 quarts water
1 onion chopped
6 T. butter or margarine
6 T. flour
1 t. salt
1/2 t. pepper
1 1/2 C. milk
In a large kettle cook potatoes, carrots
and celery in water until tender, about 20 minutes.
Drain, reserving liquid and setting vegetables aside.
In the same kettle, saute onion in butter until soft.
Stir in flour, salt and pepper; gradually add milk,
stirring constantly until thickened.
Gently stir in cooked vegetables.
Add 1 C. or more of reserved cooking liquid
until soup is desired consistency.

Potato Soup
3 tbsp butter or margarine
1 onion, diced
1/2 cup diced carrot
1/2 cup diced celery
1 clove garlic, minced
4 cups diced potato
2 cups chicken stock
1 tsp salt
1/4 tsp pepper
1 tsp parsley flakes
2 cups milk
Melt butter. Add onion, carrot, celery & garlic.
Cook until onion is clear.
Add potato, chicken stock, salt, pepper & parsley.
Boil.
Simmer until vegetables are cooked, stirring occasionally.
Add milk and heat without boiling.
Makes 5 cups.
Can sprinkle grated cheese on top.
