I have never heard of using vinegar either. I think my mom always used bacon grease, onions and lettuce. I would love to have some of that stuff now. For some reason I always loved it with french fries.

I've never measured the ingredients (oil and vinegar) but always add sugar to the mixture along with a pinch of salt. I'd say that I add 3 tbsps apple cider vinegar to 6 tbsp oil or bacon drippings. Pepper is also good in it but I am alllergic to pepper so I have to forego that taste.

Jan, it's all a matter of preference, but the oil has to be HOT! Otherwise, how are ye going to scald the lettuce?
I've never heard of using vinegar, maybe I've been missing something all these years.

I haven't fixed lettuce and onions in a while and never really did it well! I know you use oil (I'd rather not use meat fat) and salt and vinegar. I would really appreciate a review as to how I should prepare them. The ratio of oil and vinegar and salt to my greens??? Get the oil real hot....or just medium hot? Any other ingredients that you've tried that make your's really good? Someone was kind enough to bring me some beautiful fresh lettuce and onions so I'm really wanting to prepare them tomorrow (Sunday). Thanks in advance!!! Jan
