Add shredded ham to your favorite hash brown casserole or scalloped potatoes.

The ham will freeze beautifully. Dice up some for other cooking projects down the road. Use for salads, Western and Spanish omelets, chopped fine for ham salad, seasoning for greens, green beans, pinto and crowder peas, etc. Strips cut and frozen can be added to stir fry, soups, and for sandwiches. The bone can be used for soup. Green split peas and lentils are greatly improved with diced ham. For any who can stand dried, Fordhook lima beans, and I can't, they are said to add a wonderful flavor. Diced ham with black beans and rice is an excellent dish. The liquid left over in the pan makes great red eye gravy with the addition of coffee.

With Christmas dinner coming up, what do you guys do with your left over ham?

We just tried a new dish that is quickly becoming a favorite! Try shredding your leftover ham into small, bite-size chunks. Then, make a regular stove-top macaroni (complete with cheese), then toss in the ham and 1 or 2 chopped jalapenos (quantities all varying to taste).

Put it in a small casserole bowl, cover with some shredded cheddar cheese, then bake at 350 until the cheese on top is a little crispy.

This is a main dish that we just made up, but loved! You won't need side items to go with it.
