I have eaten Kudzu jelly and it was really good. Do not have a recipe, but I was told it was made from the flower.

Japanese make a high quality of starch from its roots. I have heard of using the blossoms for jelly. I can't imagine taking all the time in that rough stuff to pick enough blooms for a turn of jelly.

KUDZU....I have heard that you can eat kudzu. Lord knows I've got plenty of it. Anybody know any recipes?
