KFC Coleslaw
8 cups cabbage, finely chopped
1/4 cup carrot, shredded
1/3 cup sugar
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup milk
1/2 cup mayonnaise
1/4 cup buttermilk
1 ½ tablespoons white vinegar
2 ½ tablespoons lemon juice
Cut cabbage and carrots into small pieces about the size of rice kernels. (The food processor is great for this!)
In salad bowl, combine the sugar, salt, pepper, milk, mayonnaise, buttermilk, vinegar and lemon juice and beat until smooth.
Add the cabbage and carrots and mix well.
Cover and refrigerate for at least 2 hours before serving.

Thanks Bushman, I always wanted to have the KFC secret. Someone gave me the recipe I've been using and said it was the KFC. It's good, but it doesn't taste quite like the Colonel's.

KFC Chicken Secret Spices
1 tablespoon rosemary
1 tablespoon oregano
1 tablespoon powdered sage
1 teaspoon powdered ginger
1 teaspoon marjoram
1 ½ teaspoon thyme
3 tablespoons packed brown sugar
3 tablespoons dry minced parsley
1 teaspoon pepper
1 tablespoon paprika
2 tablespoons garlic salt
2 tablespoons onion salt
2 tablespoons powdered chicken bouillon; or 4 cubes mashed
1 package Lipton tomato cup of soup mix
There are actually 11 spices in the above combination,
but an additional 3 ingredients were necessary to derive that special flavor.
Place all ingredients in blender with on/off speed for 3 to 4 minutes to pulverize,
or rub through a fine strainer.
Store in an airtight container so it will not lose potency.
To use with flour, add 1 ounce of the mix to 1 cup of flour for coating chicken.

This is the recipe I use. Not sure if it's the exact KFC recipe.


2 cups self-rise flour
1/2 t. salt
1 1/2 t. Italian seasoning
1 T. celery salt
1 T. black pepper
1 T. dry mustard
4 T. paprika
2 t. garlic salt
1 t. ground ginger
Pre-heat oven to 350 degrees.
Mix all ingredients together in a large bowl.
Dip chicken in beaten eggs.
Roll chicken in bread crumbs.
Plunge chicken into seasoned flour mixture.
Place chicken in deep baking pan in which the bottom of the pan is covered in oil.
Cover with foil shiny side out.
Bake 40 minutes.
Remove foil and bake another 35 minutes.
Baste with oil and bake an additional 5 minutes.
Let stand 5 minutes before serving

I use the same recipe for potato wedges. Just change the baking time.

Place wedges in deep baking pan single layer in which the bottom of the pan is covered in oil.
Cover with foil shiny side out.
Bake 20 minutes.
Remove foil and bake another 20 minutes.
Baste with oil and bake an additional 5 minutes.
Using tongs, place wedges on paper towels to cool.
When wedges are cool enough to eat, they will also be drained enough so that they won't be greasy.
