The recipes already posted sound great. I boil chicken in as little water as possible until done and remove chicken from broth to cool enough to handle. Remove meat from bone and using kitchen shears cut into bite size pieces. While the chicken is cooling and then as I'm cutting it up, I boil the broth to reduce it and concentrate the flavor. Add a little knorr powdered chicken boullion, black pepper, pinch of basil, and cornstarch to thicken. Also add one packet of chicken gravy to enhance the flavor if you like. Drain a can of mixed veggies and mix chicken in with gravy and veggies. Put about 2 cups of plain flour in a bowl and add a pinch of salt and a spoon of sugar. Add to this a cup of shortnening blending into flour until mixed and crumbly. Add about a half a cup of very cold water, not from tap, but from fridge. Divide the dough in half and roll it out for your bottom crust and put in pie plate. Pour chicken mixture in and roll out remaining half for the top crust. Seal the edges, cut a few vents in the top and bake on 400 degees until golden brown. Allow to cool until you can touch it without getting burned before you cut and serve.

just add more cans of chicken broth.
i use a casserole dish with canned chicken, canned veggies, cans of cream of chicken or mushroom, can of broth to pour over top while baking it. lazy man's pie when just cooking for me in between shifts

Chicken Pie
3 lb fryer 2 cups reserved chicken broth 1 can cream of chicken soup 1 cup self rising flour 1 tsp salt 1/2 tsp black pepper 1 cup buttermilk 1 stick margarine, melted
Cook chicken until tender. remove meat from bones and skin. Reserve broth. Cut chicken into small pieces and place in a 9X13 inch pan. In a saucepan, bring to a boil the broth and soup. In another bowl, combine flour, salt, pepper, buttermilk, and margarine. Mix thoroughly to form batter. Pour broth mixture over chicken. Spoon batter over top. Bake at 425 degrees for 25 to 30 minutes.
I cook the chicken overnight in a crock pot and let it cool. easier to work with.

Moravian Chicken Pie Pie Crust 2 cups all-purpose flour 1 teaspoon salt 3/4 cup shortening 6 to 8 tablespoons cold water Filling 2 1/2 cups chopped cooked chicken Salt to taste Pepper to taste 3 tablespoons flour 1 cup chicken broth 1 to 2 tablespoons butter, cut in pieces (optional) Crumb Topping 1/4 cup all-purpose flour 1 tablespoon butter For Pie Crust, combine flour and salt in a bowl. Cut in shortening until mixture resembles coarse cornmeal. Stir in water just until dough forms. Divide dough into two equal pieces. Cover and chill 30 minutes, or until ready to use. Preheat oven to 375 degrees. Roll out one piece of dough to cover bottom and sides of a 9-inch pie plate and place in the plate. Roll out second piece of dough for top crust and set aside. Place chicken on bottom crust in pie plate. Sprinkle with salt, pepper, and flour, and pour in broth. Dot with butter, if desired. Cover with top crust, moisten edges with a little flour and crimp to seal. For Crumb Topping, rub butter into flour until mixture resembles bread crumbs. Sprinkle over top crust of pie. Cut a few slits in top crust to allow steam to escape. (Unbaked pies may be frozen at this point.) Place pie plate on a cookie sheet for easier handling and better browning of the bottom crust. Bake pie 45 minutes to 1 hour, until golden brown and bubbly. (If pie is frozen, bake at 400 degrees for 1 to 1 1/2 hours.) If desired, stir a mixture of flour and water into any extra chicken broth, plus salt and pepper to taste, and simmer until thickened to make a gravy to serve with the pie. Makes one 9-inch pie.

I mix my chicken with chicken gravy before putting in pie pastry. I put veggies in mine.
