i use jiffy mix to bread squash with when i fry it :D

I tried this today and my family loved it! Made Jiffy mix like the box said, but added a can of corn (drained) to the mix. Baked it in a large pan instead of muffins. Yummy twist on johnny cake! Hubbie hates cornbread, but ate couple slices this way.

Chopped jalapeno peppers added to batter makes good Mexican cornbread.

Good to mix with equal amount flour (I prefer to use plain, allpurpose), salt, 2 1/2 tbsp sugar, dash black pepper, 1/2 cup finely chopped sweet onion, 2 eggs, and enough buttermilk to make a thick batter. Spoon into hot oil (350-375 degrees) about 3" deep. Add batter by spoonsful--don't crowd. turn once to brown all over. Makes great hushpuppies.

Mix equal amount plain, all purpose flour with Jiffy Mix. Add salt, pepper to taste. Put in brown bag. Put fish filets (one at a time) into the bag and shake well to bread. Great way to quickly bread fish.

Try Jiffy Mix as a batter prepared according to directions for corn bread. Instead of baking, fry like pancakes to bake really good corn cakes or (as we call them) corn fritters. Butter them as you take them out of the pan. Yum!

Jiffy mix is awesome to bread porkchops with. Dip them in egg/milk and then roll in the jiffy mix and fry them. The coating swells up alot. You can use thin chops, but they will end up thick with the Jiffy Mix.

I too have used Nugget's recipe with the Jiffy and it's really good....especially with green peppers and onions.

I love Jiffy as just cornbread. For years my husband thought I made the best cornbread.....he had no idea it came from a box...LOL

1 box jiffy, 1can corn ,1half stick butter or marg., 2eggs
mix together ,do not drain corn fry in non stick skillet till dry,very tasty kids love it. you can spice it up with peppers,onions,garlic, ect.

I have lots of Jiffy cornbread mix...any recipes that it is good with? Ways to jazz it up, casseroles that would use it, ect. is what I am looking for! Thanks!
