QuackQuack--if you want to kill Kudzu--the only way to do it is to put some goats into a Kudzu patch and let them go to work!

I tried the kale chips, and was a little disappointed in my results. They burned on the edges, but were chewy and not crispy in the middle. I thought perhaps next time I would use a lower temperature, and a slightly longer baking time. What do you think? I made sure they were coated well with oil. What else could I have done wrong?

Kale is delicious as a creamed soup. Make just like Cream of Broccoli. Very good!

Thanks, got to try this with the kale and the kudzu. We need to learn to eat things like that in case the high gas prices affect us all in a negative way, if you know what I mean.

This stuff would be good and good for you!

Horses love Kudza leaves. Not sure about goats. They will usually eat anything.

Kudzu leaves deep fried like potato chips are really good too.

Bet they would be good cooked like the kale. Lord knows we have plenty of it. Just use the young tender leaves, wash, dry,and season, drop in oil, or bake them like this.

I have to share this recipe I just tried it myself after first turning my nose up to it. You will not believe how good these taste and they are completely guilt free. If you are constantly craving salty things, try these:

Kale chips (yes, Kale)

1 bunch kale, washed and COMPLETELY dried

Olive Oil Spray (fat calorie-free) or 2 tsp olive oil

Salt or seasonings of your choice

Wash and COMPLETELY DRY the kale. If the leaves are not compeltely dry, they will be steamed instead of baked, and therefore mushy instead of crispy. Preheat oven to 350. Line a baking sheet with waxed paper. Tear the kale off of the thick middle stem. Tear all the leaves into bite-size pieces. Put in a bowl. Spray with the olive oil and use your hands to "massage" the oil into all the leaves. You can also use about 2 teaspoons of real olive oil but I like the "guilt-free" part of the spray.

Sprinkle a small amount of your seasonings over the leaves and again use your hands to distribute.

Spread onto the waxed paper. Make a single layer and do not overlap. It may take more than one baking sheet.

Bake at 350 for 12 minutes. They are done when the edges are slightly brown and when you shake the baking sheet they make a rustling sound. They will be crunchy, salty, and have only the faintest taste of kale left. They tast like chips! They are also good with seasoning salt, garlic powder, or parmesan
