Pico deGallo is great! Walmart has a good size carton of it and since I tend to be lazy sometimes, I pick it up there often.

I combine a carton of the Pico deGallo with a can of black beans(rinse the beans). Add some red wine vinegar and garlic powder....GREAT stuff with some of those tortilla chips hinted with lime. I fixed a big bowl for a get together and it was a H IT!!!! The recipe I had called it Texas Cavier....we call it "Clingman Cavier."

Bushman do you know anything close to a sweet and spicy peach recipe for canning i have plenty of tomatoes and peppers so i am getting ready to can some salsa

The pico de gallo is hot but you can use less peppers to make it cooler.It is best served fresh and not refrigerated.just make it and eat it right then .You can add more oil,vinegar and onion to your taste.You can add a little sugar if you like it sweeter.
I make it and make some tortilla chips and have a feast .

Habanero Salsa
6 to 8 fresh habanero chiles -- stemmed and seeded
1 cup diced Vidalia onion, or other sweet onion
2 cups peeled, seeded and diced Plum Tomatoes
1 tablespoon Sugar
Juice of 1/2 lime
Pinch kosher salt
2 tablespoons finely chopped fresh Cilantro
If your skin is sensitive, wear disposable gloves to remove stems and
seeds from chiles. Dice finely and combine in a medium saucepan with
remaining ingredients. Simmer 15-20 minutes. Cover and refrigerate
until ready to use. Serve with tortilla chips, over tacos or with
whatever else strikes your fancy.
Pico de Gallo (Peck of the Rooster)
15 roma tomatoes (or equal)
1 onion
8 jalapenos (seeds in for hot)
juice of one lemon
1 bunch cilantro
Sat and pepper to taste
1 Tbs Oil
1 Tbs Vinegar
4 or 5 garlic cloves (minced)
The best way to do it is put it all in a food processor
or you can cut it all into little pieces by hand
Wear hand protection and wash well after handling peppers.
A large bowl for Salsa and large bowl of Tortilla chips.
Simple and Great
