little bacon grease in bottom of hot frying pan . Drain hominy pour over in pan salt and pepper to taste cook till falling apart . umm umm good

Just don't but the Walmart brand. I did the other day and they had a soapy taste and smell. Almost smelled like insense.

Hominy is just the kernal of the Corn and it taste good too.
It will absorb many flavors from other seasonings.It make a great addition to many meals.

....Hominy Chili with Beans
2 teaspoons vegetable oil
2 teaspoons bottled minced garlic
4 teaspoons chili powder
1 teaspoon ground ***in
1 (15.5-ounce) can white hominy, drained
1 (15-ounce) can red beans, drained
1 (14.5-ounce) can no-salt-added diced tomatoes, undrained
1 (14.5-ounce) can no-salt-added stewed tomatoes, undrained and chopped
1/4 cup low-fat sour cream
1/4 cup (1 ounce) shredded reduced-fat sharp cheddar cheese
4 teaspoons minced fresh cilantro
Heat oil in a large saucepan over medium heat. Add garlic; sauté
1 minute. Stir in chili powder and next 5 ingredients (chili
powder through stewed tomatoes); bring to a boil. Reduce heat;
simmer, uncovered, 15 minutes. Spoon 1 1/4 cups chili into each
of 4 bowls; top each serving with 1 tablespoon sour cream, 1
tablespoon cheese, and 1 teaspoon cilantro.
....Hot Hominy Casserole
1 medium Onion; chopped
1/2 Stick butter or margarine
2 cans Hominy; white or yellow
1 Jalapeno pepper; chopped fine
1 can Cream of chicken soup
1 cup Grated cheddar cheese
Saute onion in butter. Add hominy (mostly drained), jalapeno
pepper, soup & cheese.
Put in a 2-quart casserole dish & bake at 375 until
cheese melts & hominy begins to brown around the edges and
on top. (Add chopped pimento for color, if desired, and I
usually add more grated cheese to top before baking )
....Hominy Casserole
1 medium onion, chopped
1 garlic clove, minced
1 tablespoon vegetable oil
1 cup (8 ounces) sour cream
3/4 cup shredded cheddar cheese, divided
1/4 cup milk
1 can (4 ounces) chopped green chilies
1/4 teaspoon ground ***in
3 cans (15 ounces each) golden hominy, drained
In a small skillet, cook onion and garlic in oil until tender.
Remove from heat. In a bowl, combine onion mixture, sour cream,
half of the cheese, milk, chilies and ***in. Add hominy; mix
well. Pour into a greased 2-qt. baking dish. bake, uncovered, at
350° for 30 minutes or until heated through. Sprinkle with
remaining cheese
....Hominy Sausage Casserole
1 lb. pork sausage
1/2 c. chopped onion
1/2 c. chopped green pepper
2 (1 lb.) cans hominy, rinsed & drained
1 c. Cheddar cheese
1/2 c. milk
1/8 tsp. pepper
Lightly brown meat. Remove and set aside. Remove meat and cook
onion in sausage grease with the pepper, until tender; stirring.
Combine all the ingredients and put into a greased 2 quart
casserole. Cover and bake at 400 degrees for 30 minutes or until
bubbly. Can be frozen before baking

You may want to try a variation from Cooks for fried hominy grits.

FRIED GRITS


4 c. water
1/2 tsp. salt
1 c. uncooked quick cooking grits
2 tbsp. cooked, crumbled bacon
1/4 c. plus 1 tbsp. butter, divided
1/2 cups flour or pancake mix
2 well beaten eggs


Bring water and salt to a boil; stir in grits. Cook grits until done, following package directions. Remove from heat. Add bacon and 1 tablespoon butter; stir until butter melts.

Pour grits into a greased or Pam sprayed 8 1/2 x 4 1/2 x 3 inch loaf pan. Cool; cover and refrigerate overnight.

Remove grits by inverting pan; cut loaf into 1 to 1-1/2 inch slices. Dredge the slices of cold grits with flour. Dip in egg mixture and redredge with flour.


Melt remaining 1/4 cup butter or margarine in a large, heavy or cast iron skillet; fry slices over medium heat 5-7 minutes or until lightly browned, turning once. Yield about 8 servings.



The fried grits have a taste that reminds me of either good fried corn fritters or freshly caught and fried bluegills or crappies.

I love hominy, but don't know a lot of recipes to use it in. Anyone have any?
