Reuben & Rachel Sandwiches
For a Reuben or Rachel sandwich, made with corned beef or pastrami, along with Swiss cheese, rye bread, sauerkraut, and Thousand Island dressing.
"Reuben"
Rye bread
1/4 pound thinly sliced Corned beef for each sandwich
Swiss cheese
Sauerkraut
Russian salad dressing(recipe below)
Assemble ingredients on rye bread and grill on a lightly greased griddle until lightly browned and cheese is melted.
"Rachel"
1/4 pound thinly sliced Pastrami for each sandwich
Swiss cheese
Coleslaw

Assemble ingredients on rye bread and grill on a lightly greased griddle until lightly browned and cheese is melted.
Russian Salad Dressing
1/2 cup mayonnaise
1/3 cup ketchup
1 tablespoon red wine vinegar
1 tablespoon finely chopped onion
salt and pepper to taste
In a small bowl, whisk together the mayonnaise,
ketchup, vinegar, onion, salt and pepper until thoroughly combined. Refrigerate until ready to use.
