PUT SMALL CONTAINER OF COOLWHIP IN A MEDIUM SIZE BOWL AND ADD HALF OF BOX OF POWDERED SUGAR TOO IT.STIR WELL WITH A BIG SPOON.GREAT AND EASY ICING,NOT REALLY TOO SWEET LIKE MOST.

I make a simple cream cheese icing that everyone seems to like.

1 7 oz. block Neufchatel cheese (a lower fat version of cream cheese, but tastes the same.)

1 box powdered sugar

1 tsp real vanilla

evaporated milk

1/2 tsp powdered cherry Jello (If you have some marischino cherry juice then you can substitute for the powdered jello.)

Soften Neufchatel cheese to room temperature (or get a tub of soft cream cheese, if you choose.)

Place in mixing bowl,

add Jello powder,

add vanilla,

add powdered sugar and mix well,

when all is well creamed together:

start adding 1 tbsp evaporated milk, mix well

add additional 1 tbsp evaporated milk and mix well, continue adding smaller amounts of evaporated milk until the frosting mixture reaches the consistency you like.

If the color and taste is not fruity enough then add more jello powder, 1/8 tsp at a time until it suits you.

Spread on cooled layers as you like.

Another recipe is:

1/2 cup Crisco, regular or butter flavored,

1 box powdered sugar

1 tsp real vanilla

1 tbsp evaporated milk,

any other flavoring you like, i.e., almond, lemon, peppermint, etc.

Cream all together to consistency you like for spreading.

You can substitute fine brown sugar instead of the powdered sugar if you want a caramel look and taste.

A little rum flavoring doesn't hurt this at all.

Frostings are very forgiving. By the way, the second recipe makes a great topping for French apple pies or mince meat pies. Remember those from your grandmother?
