HOMEMADE COCONUT CAKE RECIPE

COCONUT CAKE DELUXE


1 3/4 c. sugar
2 eggs
1 1/2 tsp. vanilla
1/4 tsp. coconut flavoring
3 c. sifted cake flour
2 1/2 tsp. baking powder
1 tsp. salt
1 1/4 c. milk
1/3 c. plus
3 tbsp. coconut


Cream butter; add sugar gradually, creaming until light. Add eggs, vanilla and coconut flavoring; beat until fluffy.

Sift together flour, baking powder and salt; add dry ingredients to creamed mixture alternately with milk, beating after each addition. Beat 1 minute. Stir coconut into batter. Pour batter into two greased and lightly floured 9 x 1 1/2 inch round cake pans. Bake at 350 degrees for 30 to 35 minutes. Cool 10 minutes, then remove from pans and continue cooling. Makes 12-16 servings.



GOLDEN BUTTER FROSTING:


1/2 c. (1 stick) butter, softened
1 egg yolk
2 tbsp. buttermilk or milk
1/2 tsp. vanilla
3 c. sifted confectioners' sugar
Coconut (for top and sides of frosted cake)


Place first 5 ingredients in small mixing bowl in order listed. Blend together with electric mixer, beating at medium speed for 3 minutes. If frosting is too soft, beat in a little extra sifted confectioners' sugar to obtain desired spreading consistency.

Spread frosting on cooled cake, then sprinkle frosted cake with coconut. Frosts tops and sides of two 8 or 9-inch layers, or top of a 9x13 inch cake.

Coconut Cake
1 yellow cake mix
1 can Eagle Brand milk
1 can cream of coconut (may find where mixers are for alcoholic beverages)
1 lg. (9-10 oz.) carton Cool Whip
1 pkg. frozen coconut or flaked (12 oz.)
Prepare cake mix according to directions.
Bake in 13 x 9 inch pan.
Remove from oven.
Prick with a fork and pour a mix of 1 can cream of coconut and 1 can
Eagle Brand milk over cake. Let cool.
Mix Cool Whip and coconut.
Spread on cooled cake. Refrigerate. Serves 12.

I also fix coconut cake with a base of box mix, you fix yellow cake by box directions, it will need to be an oblong cake,while cake is baking you mix a can of coco lopez (found in the drink mixers section of grocery store) with a can of sweetened condensed milk, after cake is removed from oven poke holes all around cake then pour mixture of milk and coco lopez onto cake. After cake cools completely mix some bagged coconut and cool whip together and spread on top. Of course keep refridgerated until ready for party then it will be fine on the table for several hours. This is really simple and good.

Rave Review Coconut Cake


1 pkg. yellow Cake mix


1 pkg. Vanilla Jello Instant Pudding


1 1/3 cup water


4 eggs


1/4 cup oil


2 cups Bakers angel flake Coconut


1 cup chopped Walnuts or Pecans


Blend cake mix, pudding, water, eggs and oil in large mixing bowl. Beat at medium speed 4 minutes. Stir in coconut and nuts. Pour into 3 greased and floured 9” pans. Bake at 350 degrees for 35 minutes or until cake is done. Cool in pans 15 minutes. Remove and cool over rack. Fill and frost with coconut cream cheese frosting, below


Coconut Cream Cheese Frosting


4 Tbsp. Butter or Margarine


2 cups Coconut


1 pkg. Cream Cheese


2 Tbsp. Milk


1/2 tsp. Vanilla


3 1/2 cups sifted Confectioners Sugar


Melt 2 tablespoons butter in skillet. Add coconut. Stir constantly on low heat until golden brown. Spread coconut on paper towel until cool. Cream 2 tablespoons butter with cream cheese. Add milk. Beat in sugar. Gradually blend in vanilla. Stir in 1 1/2 cup of coconut. Spread cake layers. Sprinkle remaining coconut on top of cake.



This recipe uses a cake mix as a base. This isn't technically "from scratch" but it is really, really good. Hope this helps.
