Everybody's chichen salad recipe sounds about like mine....however, when I cook, I smell to make sure that I have the right amount in it....I know, I sounds crazy but that's how I know it has everything it needs. Another twist in addition to everybody else's recipe it to smoke a whole chicken and then proceed with the recipe. You won't BELIEVE how much flavor that puts in the chix salad. We had smoked a whole chix on evening and I had some left over and thought I'd try it. Also experiment with the spices....when I smoke the bird I like to put a little rosemary (fresh is better if you have it), parsley, pepper and ***in....the ***in brings it all together. If you don't have celery, you can add celery seeds and you'll never know the actual celery isn't in there. Let us know how it turns out.

Chicken Salad
2 cups cooked chicken cut into bite size pieces 3/4 cup good mayo ( Kraft or Hellman) 1/4 cup Ranch dressing (the bottle one) 2 green onions sliced 2 stalks celery sliced 1 16 oz packed packed frozen peas thawed (optional)
Mix all ingredients together and chill until ready to serve, nice with a tossed salad and some good bread or rolls.
This one is nice also
2 cups cooked chicken cut into bite size pieces 3/4 lbs linguini cooked and cooled 1 cup Kraft Asian Sesame Dressing 2 scallion sliced 1 stalk celery sliced handful of nuts (peanuts, cashews, pecans, optional)
Mix all ingredients together very well, chill until ready to serve. Makes a great main dish. Serve with some nice simply flat bread and you're done or even a tossed salad.

Lady's chicken salad sounds good.... I don't know why anyone in their right mind wants to add chopped celery to anything.
I like celery on a platter with hot wings and blue cheese or ranch dressing.

Pressure cook about 4 chicken breasts for 30 minutes. Tear into small pieces, add 5 tablespoons miracle whip, chop up 6 sweet pickles and add 1/4 cup of the juice. Mix all of this together and spread on ritz crackers. Fast, easy and delicious.

I boil chicken and remove from bone. Then I run the cooked chicken through the food processer. After that mix with finely chopped boiled egg, mayo, pickel relish, mustard, salt, and black pepper. Also a little onion if desired.

Chicken Salad You can use leftover chicken or canned chicken. Chop up two cups meat very well. Put this in a bowl and add one cup chopped celery, 1 tablespoon parsley , 1/2 cup chopped pecans , one cup chopped apple [ peel as well], 1/2 cup sliced seedless grapes, and either 1/2 to 1 tbs mayo, or for a new twist, 1/4 cup raspberry vinaigrette, Mix really good. May add1/4 cup raisins. Served on lettuce with crisp breads, or great in a sandwich.

Cook Chicken. I use bone-in breast pieces. Has more flavor than boneless. Pull off bone and shred with hands. I add the following: 6 eggs chopped 4-5 stalks of celery cut fine 1/4 cup chopped onion 1 medium of sweet salad cubes, drained well and I always squeeze out the extra juice with paper towels celery seed Mayo Use enough that it is not dry a little salt and black pepper 1/2 cup sugar.
Mix well. I always use my hands (Of course using kitchen food safe gloves)
Been making this for years and always have people brag on it.

My husband makes ours - just adds mayo, white grapes (cut in small bites), chopped celery (chopped very fine) and almond slivers, salt and pepper to taste.

I need a good, relatively easy, recipe for chicken salad. I am hosting a shower, and want to serve small sandwiches as part of the menu. Dale's Restaurant used to have the best, anybody have a similar recipe? Thanks!
