Heart Healthy Veggie Soup
1 can pinto beans
1 can peas and carrots, mixed
1 can Great Northern Beans
1 can Broccoli Cheese Soup
1 can diced tomatoes
1 can Ro-tel tomatoes
1 can green beans
32 oz fat free chicken broth

Hot Sauce or Hot Peppers are a flavor boost..
Mix all together and heat over high until hot then turn down
to simmer and simmer for a few minutes.
Makes 10 servings

I like to do a lot of stir fry.
You can use either fresh veggies or use frozen.
I usually stir fry with 2 tablespoons of extra virgin olive oil.
skinless chicken breast or use extra lean sirloin steak.
If using the steak, 1 - 4oz or 6oz steak cut into thin strips will feed two people. cook meat til medium well, add veggies and simmer til veggies are tender. You can add whatever seasonings you like best while cooking meat. I use teriaki sause or pepper and garlic.
serve over whole gain rice.
