Salsa Meatloaf

Salsa and cheese give a zesty Mexican flavor to this tasty meatloaf.



1 lb. lean ground beef
1 egg
3/4 cup bread crumbs
1 cup salsa
1/4 cup shredded Monterrey Jack, cheddar, or a mixture of both cheeses
salt and pepper to taste

Preparation -
In a large bowl, mix the ground beef with all the other ingredients. Use your hands or a large wooden spoon to mix everything into the ground beef. Shape the mixture into a loaf. Spray a loaf pan with non-stick cooking spray. Place the meatloaf in the prepared loaf pan. Bake in a preheated oven at 375º for 1 hour. Remove the pan from the oven and drain any fat from the bottom of the pan. Cover loosely with foil and let stand for about 10 minutes before slicing and serving

Sage Meat Loaf
1 egg beaten
2/3 C. milk
1 T. Worcestershire sauce
1 C. crushed saltines
1/4 C. finely chopped onion
1 t. salt
1/2 t. rubbed sage
1/4 t. pepper
1 1/2 lb. ground beef
1/4 C. ketchup
3 T. brown sugar
1 t. ground mustard
1/4 t. ground nutmeg
In a large bowl combine the first 8 ingredients.
Crumble beef over mixture into an ungreased 9x5 loaf pan.
Bake uncovered at 350 for 50 minutes.
Combine the ketchup, brown sugar, mustard and nutmeg; spread over top.
Bake 15-20 minutes longer or until meat is no longer pink and a meat thermometer reads 160.
Let stand for 10 minutes before slicing.

Guys this is really a good meatloaf if you want to try it different than most but really tastey.


Beef Lovers Stuffed Meatloaf

1/2 cup instant rice
2 pounds ground beef sirloin
1 pound ground beef round
1 egg
1 onion chopped
1 large green bell pepper seeded and chopped
1(4ounce) can mushrooms, drained
garlic powder to taste
salt and ground black pepper to taste
1 cup grated Parmesan cheese
1 (12 ounce can of spinach, drained
1/4 pound thinly sliced deli ham
1/4 pound of sliced salami
1/4 pound of sliced Swiss cheese

Directions:
Preheat oven to 375 degrees lightly grease a shallow roasting pan.

Prepare instant rice according to package directions

In a large bowl mix together ground sirlion, ground round, egg, chopped onion, green pepper, mushrooms, and cooked rice. Season with garlic powder, salt and pepper.

On clean counter top, arrange sheet of wax paper approximately 1 1/2 feet long by 1 foot wide. Place meat mixture on wax paper and flatten into large square, about 1/2 inch thick the thinner the better. Sprinkle with more garlic powder then layer with parmesan, spinach, ham, salami, and swiss cheese. Using wax paper roll the meat as tightly as possible while removing the wax paper as you go. Tuchk the two open ends into the meatloaf itself, While lifting with the wax paper transfer to shallow roasting pan then slide wax paper out from underneath.

Bake in preheated oven for 1 hour and 10 minutes or until meat is no loner pink and juices run clear. Allow to cool for 15 minutes before serving.

mix together about a lb. of hamburger meat, 1 egg, about a half of a pack of crackers crushes, a little worschetire sauce, a can of tomato sauce, chopped green pepper and onion. Spread in baking dish put ketchup on top and bake for about 45 minutes on 375 degrees

Hi, I used to own a resturant and my customers would call in advance to "hold' their lunch . Let me know what you think.
Dutch meatloaf: 1 1/2 lbs.ground beef, 1 cup bread crumbs, 1 med. onion: diced , 1 green pepper :chopped fine, 1/2 can of tomato sauce, 1 egg beaten, 1/2 tsp. pepper, 1 1/2 tsp. salt. Mix, shape into a loaf bake in a shallow pan @ 350 degrees for 15-20 minutes. While it starts to bake mix the sauce. Sauce: 1/2 can tomato sauce, 2 tsp. mustard, 2 tbls. brown sugar, 2 tbls. vinegar, 1 cup water. Pour over meatloaf and continue to bake for about 1 1/2 hours. Cover with foil if it starts to darken , baste occasionally, enjoy !! This is the absolute best meatloaf I have ever tried. Hope you like the recipe. Let me know what you think.

1Lb. hamburger
1 can tomato paste
1/2 cup milk
1 cup oatmeal
onion
salt and pepper to taste
1 egg
Mix all together and put in a loaf pan. Bake 350-400 degrees for 45 minutes take out and cover top with ketchup and put back in oven for 15 more min.

I tried a mushroom swiss meatloaf recipe I found on here sometime last year. I haven't made it in awhile and can't locate my recipe - but it was a hit! Maybe the original poster will see this and post again.

About 2 3/4 lbs. ground chuck, chopped onion, package meatloaf seasoning mix, can of sloppy jo sauce, chopped green peppers, black pepper, couple dashes worchestershire sauce, 2 eggs, quick oats(however much you need to add for the mixture to not be too mushy), mix well and add some more oats if you need to. Spray 9x13 in. baking pan well with non-stick spray and press mixture out evenly in the pan. Pre-heat oven to 375. Spread a can of tomato soup over top and bake for 30 minutes then turn heat down to 350 degrees and bake for about another 45 minutes to an hour.

1 slice of bread broken up in chunks
3T ketchup


the rice holds the meatloaf together also provides onions, green peppers and tomatoes. yummyyyy!!!!

1` pound hamburger meat , 1/2 onion diced, 1/2 cup oatmeal, 1/2 pack of townhouse crackers, or club crackers , mix in ketchup, enough to make it moist, pack it in a 8 x 10 baking pan. bake 350* for 45 minutes to an hour. DO NOT PUT KETCHUP ON TOP. my family wipes it out!!!

Mine never fall apart because I do what all the receipe books warn against. I throw the meat mixture (in a ball) multiple times into a biscuit mixing pan in order to beat the air out of the meat mixture. I used to make 12 at a time when I operated our restaurants. Never had one to fall apart. Always let them rest 30 minutes before slicing or, if I am going to serve only one I slice at the table.

If you are making one for home then buy a can of Hunt's Meatloaf fixings and follow the directions (also add 2 eggs and a cup of quick dry cook oatmeal.)

It is so much easier (and failproof) than trying to make one on your own. I also add 1/2 diced green pepper and 1/2 diced onion, and 1 or 2 ribs of celery (diced fine) to mixture. Adding a tsp of Texas Pete to the mixture along with a tbsp of worchestershire and a tsp of garlic powder doesn't hurt either.

BTW, if you are maing this for home use you might want to consider making two meat loaves and freezing one. They freeze really well, either cooked or uncooked.)

LIPTON ONION-MUSHROOM MEATLOAF

1 env. Lipton onion mushroom soup mix
1 1/2 lb. meatloaf mixture, ground beef and ground pork
1 c. soft bread crumbs
1 egg
1/2 c. water
1/4 c. ketchup

Preheat oven to 350 degrees. In large bowl combine all ingredients. In large shallow baking pan, shape into loaf. Bake 1 hour.

pepper

Bake in loaf pan at 350 degrees for 1 hour

does anyone have a good meatloaf recipe,my husband makes meatloaf but it falls apart,how what do you put in it to keep it together,thanks
