Betty's Macaroni Salad 1 package dry macaroni or your favorite noodle 2 small cucumbers, peeled and chopped 1 med. onion, chopped 1 can drained mushrooms 2 lg tomatos, peeled and chopped 2 tablespoons sweet pickle relish 1 small can black olives, chopped 1 can drained green peas 1 stalk celery chopped 1 can tuna in water drained 1/4 to 1/2 cup mayonnaise, your choice 1/2 cup cheese, cubed or shredded 1/2 tps garlic powder or fresh chopped vinegar to taste salt and black pepper to taste Cook macaroni according to package directions. Drain and add remaining ingredients; stir well. salt and pepper to taste. serve warm or chill 2 hours. Serve on lettuce cups with a pickle

Thanks Whitehawk, I believe this is how I used to make mine. I was trying to remember all the ingredients, and forgot about the mustard and green peppers. I like the idea with the bacon bits...going to try that. Thanks again, making some tonight.

there are different kinds of macaroni salad. it depends on what you prefer. my mom makes the mustardy kind with lots of onions and peppers, which is really good, i just pick out most of the onions, because i don't like them. my sister-in-law makes the mayo kind with different things in it, i do know it has tomatoes in it, it is REALLY GOOD!!

Try mine:
1-1/2 lb box elbow macaroni
5 or 6 green onions - chopped. I like to use the green parts as long as they aren't tough. If you don't have green onions then use 1 small sweet onion and 1 small purple onion, diced at a 1/4" dice
1/2 tsp salt, to taste
2 cups diced red, yellow, orange, and green sweet peppers
3 single stalks celery, diced (don't use the leaves.)
1-1/2 cups Mt Olive chopped sweet pickles
1 large grated carrot
1 tbsp or more, to taste, yellow French's Mustard
1-1/2 Cup Duke's Mayonnaise black pepper, to taste
Boil macaroni in salted water. Add 1 to 2 tbsp oil to water to keep macaroni from boiling over
Drain well
Add all ingredients and mix well.
Taste for seasoning to your preference
Cover and refrigerate until cold. This will let the different flavors blend together.
I've seen people add bacon bits (not artificial ones) after mixture gets cold. My son likes it like that. I don't. Up to you.
Serve cold.
