Well, with it being so nice outside, it's grillin' weather! I just stopped by Mother Earth and got a couple of tuna steaks. Melissa will get some asparagus on the way home, and instant potatoes go great with the meal.

Cover the tuna steaks in olive oil and either lemon pepper or blackened seasoning. Heat one side of the grill to high, and the other on low. Grill the steaks on the high heat side for 2-3 minutes (do not flip them), then flip them over to the low heat side and grill for another 4-5 minutes.

They should be white/gray on the outside and for about 1/4" into the steak, then red on the inside. Trust me, this is one steak that you do NOT want well done!

For the asparagus, you can either wrap them loosely in aluminum foil and throw them on the grill with the steaks, or Melissa frys them on the stove top in butter. You'll want to keep them crisp, so just let them cook for a few minutes.

Instant potatoes... well, follow the directions.

No bread is really necessary, but if you want bread then white or wheat rolls go well.

That's it! Quick and easy to make. It's not the cheapest meal to cook at home (the steaks were around $15 by themselves), but it's an excellent treat for a pretty day.

I would love for ya'll to share your favorite best recipes...I am bored of "What's for dinner?" Come on...spaghetti once a month is enough! We love casseroles, chicken, ham, fish, anything. Something tasty, filling and prefer quick! Thank you!
