Applesauce is used to reduce the fat content in baked goods.

You can also substitute 1 for 1 with mayonnaise.

if it is for moistening a cake you can always add 1 c. of sour cream and 1 c. of vanilla inst. pudding powder to your cake mix for a more homemade flavor add other ingredients as directed if you need a more stable cake for carving etc. you can put only whites instead of whole eggs.
If your doing a choc cake add choc pudding instead of vanilla
Applesauce should be fine instead of oil 1:1 ratio but i would do it the other way as i stated for a better cake mix for moisture if thats what your looking for

Call me crazy but I've never heard of doing this before. What is do you do the substituting for? Is it healthier or make the cake more moist? I will try this sometime.

1 to 1 ratio. If the recipe calls for 1 cup of oil, just substitute using 1 cup applesauce.
