Hawaiian Chicken
Sweet and Sour sauce...recipe below 1 cup packed brown sugar 1/2 cup orange juice 4 tablespoons white wine 1/4 cup butter, melted 4 skinless, boneless chicken breasts Preheat the oven to 400 º. In a bowl, combine sweet and sour sauce, brown sugar, orange juice, white wine, and melted butter or margarine. Mix well. Place chicken in a greased 9x13 inch baking dish, and pour sweet and sour sauce mixture over chicken. Bake for 45 minutes in the preheated oven, until the sauce has reduced to a thick glaze. Sweet -and- Sour Sauce 2 Tbsp. unsalted butter 1/2 red bell pepper, cored, seeded, and cut fine 1 large garlic clove, minced or pressed through a garlic press 1/2 C. red wine vinegar 1/4 C. honey 1/2 C. sugar 1 tsp. salt 1 tbp. red pepper flakes Melt the butter in a small, heavy bottomed sauce over medium-high heat. Add the bell pepper and garlic, and sauté until tender, about 1 ½ minutes. Stir in the vinegar, honey, sugar, salt, and red pepper flakes and simmer until the bell pepper is very soft, about 15 minutes. Transfer the mixture to a food processor or blender and process until smooth, about 10 seconds. The sauce may be served warm or at room temperature.
