1 (2 pound) package frozen hash brown potatoes, thawed

1/2 cup butter, softened

1 teaspoon salt

1/2 teaspoon ground black pepper

1/2 cup chopped onion (I like to use sweet onion)

1 can cream of chicken soup

2 cups shredded Colby cheese - or cheddar if you prefer

Preheat oven to 350 and spray a 9x13 pan with Pam. Gently mix all ingredients in a large bowl and pour into pan. Bake uncovered for 35-40 minutes. You can also add some crumbled up bacon to the top or in the mixture.
