French Toast Casserole Tempting cinnamon bread is soaked in a custard overnight, ready to be baked for a perfect brunch dish. 1 loaf (16 oz.) Cinnamon Swirl Bread, cut into cubes 6 eggs, beaten 3 cups milk 2 tsp. vanilla extract Confectioner's sugar PLACE bread cubes in greased 3-qt. shallow baking dish. Mix eggs, milk and vanilla. Pour over bread. Cover and refrigerate 1 hr. or overnight. Uncover. BAKE at 350°F. for 50 min. or until golden. Sprinkle with confectioners' sugar. Serve with maple syrup, if desired. Serves 8.
Farmer's Omelet 3 tbsp. vegetable oil 1/2 cup green onion chopped 3 1/2 cups frozen hash browns 1/2 tsp. salt 1/2 tsp. pepper 4 eggs beaten 1 red pepper chopped 1 1/4 cup milk 1 cup Swiss or American cheese
Preheat oven to 400 degrees. Heat a large skillet. Add oil. When oil is hot, add potatoes and red pepper. Add green onion, sprinkle with salt and pepper and cook until soft. Top with pepper, then cheese and. Beat eggs and milk together and pour in skillet. Bake 45-50 minutes until set and golden. Cool slightly and cut. Served with toast and homemade jelly,

Oops... I should have said cooked and crumbled up bacon!

1 (2 pound) package frozen hash brown potatoes, thawed 1/2 cup butter, softened 1 teaspoon salt 1/2 teaspoon ground black pepper 1/2 cup chopped onion (I like to use sweet onion) 1 can cream of chicken soup 2 cups shredded Colby cheese - or cheddar if you prefer Preheat oven to 350 and spray a 9x13 pan with Pam. Gently mix all ingredients in a large bowl and pour into pan. Bake uncovered for 35-40 minutes. You can also add some crumbled up bacon to the top or in the mixture.

Here is a simple one.
Hashbrown Casserole 1 pkg. frozen hasbrowns (country style - 30oz) 1 cup sour cream 1 stick margarine (4 oz) 1 can cream of chicken soup 1/2 pound cooked bacon or sausage 4 eggs mixed well salt and pepper to taste 1 Tbs. instant minced onion (or freshly chopped onion to taste) 2 cups shredded sharp cheddar or colby cheese PREPARATION: Melt margarine,add and mix sour cream,soup,onion, cheese, eggs,meat in a large mixing bowl. Pour hashbrowns in the bowl and mix all together well. Then put all in casserole dish. Bake uncovered at 350 º for one hour.
