Easy Stroganoff.

Brown hamburger, add chopped onions then mushrooms and a can of cream of mushroom soup and about a teaspoon of Worcestshire sauce or more if you like. Simmer a bit, add small carton of sour cream and serve over egg noodles.

I like to make what I call BBQ Hamburger. Can be used over mashed potatoes or rice.

2 lb good, lean hamburger, 1/2 cup diced onion, 1/4 cup diced celery, 1/2 cup diced sweet pepper, 1/4 tsp garlic powder or salt, 1 tbsp worchestershire sauce, 1/4 to 1/2 tsp salt, black pepper to taste if you want.

Stir and brown all ingredients until meat is no longer pink and peppers and onions are cooked clear but not mushy.

Add 1 303 can pureed tomatoes (not sauce), 1 cup catsup, 1/2 tsp hot sauce, 1 tbsp ballpark (yellow, prepared) mustard, and 1 tbsp apple cider vinegar (optional).

Cook until bubbly. Reduce heat to low. Add 1/4 to 1/3 cup brown or white sugar. Stir rapidly so as to keep sugar and tomato catsup from burning.

Serve over steamed rice or mashed potatoes.

(Adding oregano and diced tomatoes to this mixture changes it to an excellent spaghetti sauce.

Say Cheese!

Hamburger Steak & Gravy
Steak:
2 pounds ground beef
3 tablespoons dry onions
1/2 teaspoon pepper
1 teaspoon salt
6 tablespoons flour
Gravy:
2 tablespoons margarine
1/4 cup flour
2 cups beef broth (made from bouillon cubes is fine)
1/2 teaspoon onion powder
Dash pepper
Begin by preparing the steaks. In a cereal bowl combine the flour, salt and pepper. Mix it up with a fork to distribute the seasonings evenly. Measure 1/4 cup of the seasoned flour, and set the rest aside until later. In a large bowl combine the ground beef, dry onions and the 1/4 cup of seasoned flour you just measured. Use your hands to combine it like meatloaf. Pat the meat flat into a 9" by 13" rectangular pan. The meat will be very thin. Score or cut the meat into 16 squares with a knife or a pizza cutter. Take the reserved seasoned flour and pat it on top of the meat. Bake at 400° for about 20 minutes. The meat will shrink up, and there will be a lot of fat floating in the pan. Carefully drain off the fat and recut the squares.
Prepare the gravy while the meat is cooking. Melt the margarine in a small skillet. Add the flour. Cook and stir this for a few minutes over low heat so that the flour browns a little bit, watch it carefully so it doesn't burn. This will make the finished gravy a pretty and appetizing brown color. After the flour is the color of coffee with cream added, stir in the beef broth. Usually I just add two cups of water and 2 beef bouillon cubes. Also add the onion powder and a sprinkle of pepper. Stir the gravy until it is smooth and bring it to a boil. Simmer for a few minutes, or until it is slightly thickened, but still a little thin. The gravy is thin because this makes it easier for the meat to absorb it some. Pour the prepared gravy over the steaks in the pan, after you have drained off the fat. Serve with instant mashed potatoes, green beans, canned peaches, and butter-bread. This recipe serves 6.
Hamburgers Diane
1-1/2 pounds ground beef (chuck for flavor or sirloin for lower fat)
2-1/2 teaspoons Worcestershire sauce, divided use
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 Tablespoons butter, divided use
1/4 cup finely chopped shallots or sweet onion
4 button mushrooms, chopped
1/4 cup red wine (may substitute strong beef broth)
1 Tablespoon Dijon mustard
1 Tablespoon lemon juice
1/2 cup heavy cream
2 teaspoons chopped chives for garnish
Gently combine ground beef, 1 teaspoon of the Worcestershire sauce, salt, and pepper. Form into 4 patties, each 1-inch thick.
Heat a large heavy skillet over medium heat. Add 1 tablespoon of the butter and sear ground beef patties until browned on each side. Remove to a platter and keep warm.
Add remaining 1 tablespoon of butter to the same skillet along with shallots and mushrooms. Saute until most of the liquid has evaporated and vegetables are soft. Carefully add red wine and stir often, scraping up browned bits, for 2 minutes until reduced. Stir in Dijon mustard, lemon juice, remaining 1-1/2 teaspoons Worcestershire sauce, and cream. Cook an additional 2 minutes. Taste and adjust salt and pepper, if need be.
Return beef patties, with any accumulated juices, to the sauce, turning to coat. Heat until warmed through, sprinkle with chives, and serve with pan sauce.
Yield: 4 servings
Mushroom Cheese Hamburger Steak
1 1/2 lbs. hamburger meat
2 jars of brown gravy
1 medium onion
1 can of mushrooms
1 egg
4-5 slices of Swiss or provolone cheese
salt and pepper
2 tablespoons of butter
Sauté sliced onions and mushrooms in buttered skillet. Mix hamburger meat and egg. Shape meat mixture into patties and fry in skillet. When meat is fully cooked in skillet, melt cheese on patties. Remove patties from skillet and drain excess grease.
Return skillet to stove on medium heat and combine the sautéed onion, mushrooms, and 2 jars of brown gravy. Heat until bubbly and add removed patties back into the skillet. Great with mashed potatoes
Meatball's Sweet and Sour
12-ounce package of sausage (ground)
1 pound of ground beef
1 egg
1 Tablespoon of Worcestershire sauce
1/3 cup of bread crumbs (dried)
Seasoning to taste (you pick)
Chili Sauce
Grape jelly
Preheat your oven to 400 degrees F.
First, mix all of the above ingredients thoroughly. Get your hands dirty and dig in to make the meatballs. All you need to do is shape the meat mixture into little balls, about 1 and 1/2 inch around. Then, bake them for approximately 25 minutes.
Next, make the sauce.
Simply combine an equal amount of the chili sauce and the grape jelly. Then, heat the mixture in a large saucepan. At this point, add the baked meatballs, gently mixing everything together and then heat through.
Serve with toothpicks inserted into each meatball and surround them with the remaining sauce. You can serve them immediately or store for use later. If you decide to store the meatballs, just warm them up in a saucepan just before you serve them.
For an twist on the same theme, serve this meatball appetizer with heated pineapple chunks added to the sauce.
Enjoy!
