My wife does a mean casserole with mashed potatoes, cheese, and ground beef. I know lots of people do something similar to this. Only takes about 20 minutes (if the beef is already browned), and tastes amazing.

Here's one for ya!! my grandma has made this for years,,and all the kids love it,
1lb, hamburger meat...browned and drained 2 cans of veg. soup..(all veggies not the veg.beef kind)..(do not add the water to the soup) 2 to 4 spoonfuls of ketchup 1 spoonful of mustard
brown your meat and drain. add your soup and ketchup then your mustard..and simmer..we always ate this kind of like you would sloppy joes on a bun,,,
depending on how long its gonna be before you serve you can add a little water to keep it from getting to thick. and still leave it on the stove to simmer, if too much water just cook it a little longer.

Meatloaf
1 1/2 lbs. ground beef
1 cup ketchup
1/2 small onion, chopped
1 cup white bread, broken into small pieces
1 egg, beaten
1 tsp salt
1/8 tsp pepper
Mix together and place in foil lined loaf pan, then for topping, mix together
1/2 cup ketchup
2 TBS ketchup
2 TBS apple cider vinegar
2 TBS brown sugar
Spread over meat loaf and bake at 350 degrees for 1 1/2 hours. Delicious.
I also mix the meatloaf if I am in a hurry and place into a muffin pan for smaller ones. They will bake at 350 degrees in 30 minutes.
An even quicker way is to mix the meatloaf, then form into patties and grill on the George Foreman. Then, mix the topping, heat it in the microwave, and pour it on the burgers. About 10 minutes.
Another way to cook this: Use a glass loaf dish, omit the foil lining, and cook the meatloaf in the mocrowave for 12 minutes. Voila!

Don't forget chili con carne or chili beans. Also used for making hot dog or hamburger chili.

Take 1lb. of ground beef and fry it with chopped onion and garlic. Using canned biscuits, roll them out large enough to line muffin tins. Fill half full with hamburger mixture. Finish filling with salsa. Top with cheese. Bake until biscuits are done and brown. Simple and really good.

You could also use it not for a meal but a snack....a cheese dip...cheese, ground beef, sausage, and tomatoes....it is really good with some tortilla chips.
You could make tacos as well, my grandma makes small hamburger patties puts it in a pan with cooked cabbage and potatoes...add a little soy sauce or worcestershire sauce to the hamburger patties. Love it!!
