grilling vs. smoking

I hope you can still get some. The man that made it died recently. His name was Clate Bumgarner. He made the best sauce in town.

Yes the sauce is the sauce that the fire departments and churches purchase for the chickenques. It is very very good.

you usually only smoke pork or occasionally chicken. i wouldn't try to smoke a steak. it would probably get overdone and not taste very good.

Jbare, is this sauce you buy at Wilkes Hardware about the same type sauce they use at chickenques? If so, I'm certainly going to buy some.

I own a smoker and it can be used as a grill or a smoker. You can adjust how close you want the charcoal to be to the grilling rack. I use it all the time. I also own a gas grill and I very seldom use it. The smoker is great to grill barbecue chicken on. Go to wilkes hardware and buy a gallon of the Fire Department style sauce and the smoker works great. I don't use the water much in mine unless I am going to smoke a pork roast for barbecue. I just put my charcoal on the next to last setting and grill steaks and chicken. I soak some hickory or mesq. chips and throw them in there on the charcoal periodically. It takes alot longer to grill this way. But you don't have to constantly run outside or stand there and check your grill. You can go and cook the rest of your meal. The steaks are great, they taste better than any other way of cooking them. Go buy one and try it you will love it. 8)

Just wondering what your thoughts are on smoking versus grilling steaks, etc. Which is better? Which is the most convenient. I have been thinking about buying a smoker. I hate the running in and out of the house to grill AND take care of things inside. It seems that you wouldn't have to constantly watch the food while it is in the smoker. Any thoughts on this?
