Greens are one of my favorite things to eat. They are hard to wash and get clean. I wash then one leaf at a time. This takes forever because you really need a lot. They shrink. I fold in half and cut the stem out. This is not necessary but I don't like the stems. I use a pressure cooker but if you don't have one you can just use a pot. Put greens in pot with water and salt and cook until done.

Now my mother drained all of the water off and then fried them in fat back grease but I don't do that. I just eat them with salt and a little vinegar.

Of course I have to have cornbread and deviled eggs ...just a southern tradition
