Big Mess o Greens
1 smoked ham hocks (or streaked meat or bacon)
2 c. Water.
2 tablespoons cider vinegar (optional)
2 teaspoon sugar (optional)
1/2 tsp bakng soda (takes out the bittewr taste)
3 pounds greens, well rinsed, thick stems trimmed of and discarded,
cut crosswise into 1/2-inch-thick strips
Salt and pepper to taste
Bacon drippingsfor flavor.
In a large pot put the sugar.,greens ,soda, drippings and 2 cups water
ham hock and stir well, simmer on low for 2 hours.
Then I take a frying pan add some bacon drippings and fry them just till
cooking juice is gone.
Serve with Cornbread and vinegar.
(You can drink the cooking juice ,Pot likker it is called ,it's good)
