CANNING GREEN TOMATOES | | Wash and slice tomatoes. Put in jars. Place jars into a water bath canner and fill with water to cover the jars completely by 1 inch.Bring to a boil; boil 10 minutes. Remove from canner and allow to cool. Wide mouth jars are easier to use for this recipe.
Use as you normally would use green tomatoes.

it is good. try it out. i like to make small tarts with the recipe. if you don't have a canner, make pies and freeze them.

i love fried tomatoes, but can only eat so much. try this for a nice winter pie filling. it's great
Green Tomato Mincemeat
3 qts chopped green tomatoes
1 1/2 quarts peeled, chopped tart apples
2 cups raisins
2 teaspoons ground cinnamon
1/4 teaspoon ground allspice
1 1/2 to 2 teaspoons salt
3 cups brown sugar, firmly packed
3/4 cup Vinegar
1/4 cup lemon juice
Combine all ingredients in a large heavy pan until apples are tender and liquid is thick, about 1 hour or more. Stir frequently to prevent sticking.
To can, pour boiling mixture into hot, sterile jars, leaving 1/2-inch headspace; seal promptly. Process in a boiling water bath for 20 minutes. Store in a cool dry place.

summer: The only thing I've ever done with green tomatoes is fry them. I think they can be used in canned salsa and chow-chow. You can google recipes for canning them, though. Good luck!

what is a good recipe for preserving or canning green tomatoes? is pickeld green tomatoes good? if so what is the recipe for them. thanks
