Use country ham in green beans. In the country ham section at the store find the pieces packed for seasoning. I love country ham in green beans and pintos too.

Southern-style green beans 1 pound fresh green beans, trimmed, rinsed, and cut in 1 1/2-inch pieces 1 quart (4 cups) water 1/4 pound diced salt pork or 1 ham hock 1/4 teaspoon salt dash sugar Put water in a 2-quart saucepan; add diced salt pork. Cover and cook for 5 minutes. Add green beans, salt, and sugar; cover and cook green beans over medium heat for about 30 minutes, or until greenbeans are tender.

Depending on the quantity of beans being cooked determines the amount of fat meat. Although I don't use it for my personal consumption I always, at our restaurants added 3 to 4 strips of thick, fat bacon to the beans when I began cooking them. I also added a diced, whole, sweet onion at the beginning. Some prefer to add a whole onion so as to be able to remove it, intact, before serving the beans.
At Bob Evans Restaurants we added 2 cups of "ham hocks" to 10 lbs. of green beans. These ham hocks were actually trimmings from the lower hock and country ham trimmings which were purchased in #10 cans and were an excellent addition so you may want to try some of the Junior Johnson Country Ham Bits and Pieces which are readily available where the Johnson Ham Products are normally sold.

I also like to make green beans w/ Swanson's Chicken Broth as a replacement for water. Those are usually pretty good too.

My mom used to make Green Beans w/ Fat Back in it to flavor the beans. Just put it in and boil w/ the beans.

i know this may seem silly but i decided to finally just ask today. i have been thinking about my holiday meal and want to make some of those green beans with "pork"
this is a southern thing and i never learned how to make them, only eat them.
what kind of pork do i use? bacon, what? do i fry or cook the pork first? all in the same pot together? how long do i cook it for?
any help is greatly appreciate. i absolutely love green beans cooked this way
