This is recipe I use from Food.com. I add a little diced celery, shredded carrot, and a smidge of sweet red pepper.

Ingredients1 (46 ounce) cans chicken broth1 (10 3/4 ounce) cans condensed cream of chicken soup1 cup uncooked rice2 cups diced cooked chicken1/4 cup fresh lemon juice1/2 teaspoon lemon rind DirectionsIn a 5-quart Dutch oven, combine chicken broth and cream of chicken soup, mixing until well blended.Stir in rice, chicken, lemon juice and rind.Bring mixture to a boil.Reduce heat.Cover; simmer 15 to 20 minutes or until rice is tender.

I LOVE avgolemono soup (the greek lemon chicken soup). Since I moved to Wilkes, I've not found a place that makes it. Does anyone have a tried/true recipe? Thank you!
