the new wal mart carries the gyro sauce you're looking for. i believe the name is " tezeiki " sauce or something close. you will find it in deli section.

Cucumber-Yogurt Sauce

1 C plain or Greek plain yogurt
1 seedless cucumber. cut in half longways
1 clove garlic, minced and crushed fine
1/2 tsp kosher or sea salt (at any rate, plain)
1 tbsp finely minced mint
2 tbsp olive oil (extra virgin)
fresh ground pepper (optional)
1/2 tbsp finely minced cilantro (optional)

seed the cucumber and shred the cucumber. Wrap in dish towel or cheese cloth and squeeze out as much of the juice as you can without "mushing up" the cucumber. Discard juice.

in a crucible or large glass/ironware bowl, using back of spoon or pestle mash the garlic and salt to form a paste.

Stir all ingredients into yogurt, olive oil, mint. Blend well and refrigerate overnight. This will keep for 3 days.

(If you find your yogurt is too watery then place it in a lined colander or sieve and place this into a container so that some of the liquid will drain from the yogurt. If you let all the liquid drain out you will have cheese...otherwise, drain for 1 to 3 hours.

Hi all. I have a lamb coming back from the processors next week and am dying to make Gyros. Does anyone know the recipe for the greek cucumber sauce that goes on top?
