FUNNEL CAKES RECIPE

Ingredients:

3 eggs
2 cups milk
1/2 teaspoon vanilla extract
4 cups sifted flour (plain)
1 cup packed brown sugar
1 tablespoon baking powder
A pinch of salt
Oil for frying
Powdered sugar and cinnamon for dusting

Directions:
In a mixing bowl combine the eggs,milk and vanilla.
Sift the dry ingredients together into another bowl.
Fold the dry ingredients into the wet mixture and stir until smooth. It should look like pancake batter.
Heat an inch of oil in a frying pan. Fill your funnel with about 3/4 cup of the batter and drizzle into the hot oil.
Fry briefly on both sides,for about one minute total.
Remove from the oil and place on paper towel to cool.
Top with powdered sugar and cinnamon.
