I had previously posted this on another thread. This does a good fried tater using the oven.
wash and cube potatoes, don't peel. spray cast iron skillet really well with non-stick spray, dump potatoes in and spray non-stick spray over top of potato pile after you spread it out evenly. sprinkle with salt or seasoned salt, black pepper, paprika, parsley, garlic powder too, if you like. cut up some blue bonnet and place on top. butter will burn. put in a 500 degree oven. when you see potatoes starting to brown, use a large metal serving spoon to gently "stir" by turning potatoes over spoonful by spoonful which will coat potatoes with seasonings and melted blue bonnet and make potatoes brown more evenly. put back in oven and keep watch. take it out and "stir" and put back every 5-10 minutes or so until it's as brown as you like. if you want to add chopped onions, wait until at least halfway through cooking.

try sprinkling a little flour over your taters after you put them in the skillet. they brown so nice and crusty

i always heard the best way to fix "fired" taters is to give them a job to help get them back on their feet. Although, democrats too often prefer to put them on welfare and a ward of the government from then on. lol

I also add a little garlic powder to my fried potatoes. Sometimes I add a little cayenne (sp) pepper to.

i have an aunt that swears by her electric skillet when it comes to taters, i don't have one but i bet it does do better since the heat is consistent

Cut them into cubes add oil to a med hot skillet and cook till golden brown add salt and pepper and serve.

my mom always cut her taters in chunks, however i slice mine it doesn't really make any difference but i like to cut up some onions to add too... i cook em in oil and add me some butter too (i don't use margarine, ever) my kids like them with seasoned salt, i do too at times but sea salt and black pepper is good enough for me
