The recipes that I have do not say to peel, I guess that you could if you wanted to.

For the sticking problem, I use the baking spray with flour in it, it works most of the time. But, the best thing that I have found that keeps stuff from sticking is to use the Renolds Release nonstick foil. It is the absolute best! I normally bake all fries, chicken, roast, ect on it because it works so well!

Are you suppose to peel the potatoes or just bake them with the skins on? Also any info on how to keep them from sticking? I've used spray and nonstick pans, but they always seem to stick.

Oh, I just found a recipe for Oven Fries too!

4 small baking potatoes
1 tablespoon of margarine
1/4 cup of parmesan cheese
1/2 teaspoon of garlic salt
1/4 teaspoon of paprika
1/8 teaspoon of onion powder

Scrub potatoes. Cut into 8 slices lengthwise. Brush with margarine. In a bag, combine spices. Add 8 slices and shake to coat. Spray baking pan with cooking spray. Arrange potatoes on to pan. Bake at 400 for 25-30 minutes or until tender.

I have a recipe for crusty potato wedges...

1 pound red potatoes, scrubed
1 tablespoon of dijon mustard
1 1/2 teaspoon paprika
3/4 teaspoon of ***in
1/2 teaspoon garlic salt

Preheat oven to 400. Spray baking pan with nonstick baking spray. Cut potatoes into wedges. Combine mustard and spices. Add potatoes to the mixture, stiring to coat well. Spread potatoes onto baking pan in single layer. Bake for about 20 minutes, turning halfway through. Bake until crispy and tender.
