I'm gonna try this. I tried freezing it once but it was NASTY. I'll try leaving it partially frozen before its breaded. I would love to have fried squash in the winter. Thanks for the suggestions and the thread.

Looking at thisandthat's posting reminds me of what I do with green tomatoes and egg plant. Only difference is I use a light egg wash before breading and then place on cookie sheets for freezing,. Absolutely the best!

BTW, don't salt the tomatoes or eggplant before freezing. Causes large ice crystals.

You can also slice it, flour it...then freeze it.

If you peel it before you freeze it you can substitute it for apples in a pie,no one will ever be the wiser.

frying frozen squash can be done...I do it all the time...the secret is not to let it thaw out completely...let it thaw just a few minutes at room temperature on a paper towel....mix a batter or just use dry flour....dip squash into it and deep fry...it will cook threw and be juicy not greasy...the cold water from being frozen will keep the grease from seeping into the squash and becoming greasy.

Last time I defrosted some sliced squash it turned to much, could not be fried. I feel into a deep depression that went on for 45 minutes, looking back on the incident I should have never froze my squarsh.

You can make squash casserole out of the frozen ones, it's good.

They also make a great soup and can also be breaded before being frozen. Either way, all are delicious!

This and that's method Works Great!!! you also can use wax paper to layer them up on the pan if you don't have much room in the freezer

Here is what I do. Slice the squash, put slices on cookie sheet in seperate slices and freeze. Once frozen, put In freezer bags.
Then you can cook only the number of slices you need.

If you do it that way make sure it is dried well before freezing.

We have alot of squash that is almost ready to be picked from the plants and I am wanting to freeze some of it for this winter. I was just curious how many people "blanche"(boil for a few minutes) before freezing. Is it okay to just wash, slice, and freeze or should it be cooked first?
