Yes, I freeze green peppers and if I have onion left over I also dice it up and freeze it also.

I chop them up with a food processor and leave them chunky. Measure into qt freezer bags and then when I need them for a recipe in the winter I wackem on the counter and break em in half. Don't put too much much in the freezer bags and keep them thin and flat while freezing.

I used to dice up the pepper and put in baby food jars - pop in the freezer - always turned out fine for spaghetti sauce.

i use to freeze some green peppers and others as well. all i did was chop them up, lay out indivicually on cookie sheet cover with waxed paper, put them in freezer and let them freeze, dont take long, then put them in zip lock bag and when you need them just add to whatever your cooking.

Pre chop Peppers and put a TBS pepper in each hole of a ice tray add water to cover and freeze . When frozen pop out and put in zip lock bags ,move to deep freezer . To Use,,,, Use just like fresh just add as many cubes(Tbs) as you need , I said aTBS but it could be more according to ice tray.

I've been freezing all these peppers for years when they go on sale and then use them in sauces. I use fresh peppers for stir fry though because the peppers are a lot more mushy after being frozen but this works fine for spaghetti and other hot sauce type dishes.

Has anyone ever done this? I was wanting to freeze some for soups, stir fry and whatever else you can put them in for this winter. They are pricy and we have several from the garden. Thanks
