THANKS FOR ALL YOUR SUGGESTIONS AND IDEAS, I JUST RETURNED FROM ASHE COUNTY AND HAD A VERY SUCCESSFUL PICNIC AND VISIT. WHAT A GREAT PLACE, JUST AS I REMEMBER, FRIENDLY FOLKS AND GOOD FOOD. I ATE AT GENOS WHILE I WAS THERE AND WAS SURPRISED AT THE SELECTIONS, THUMBS UP!!!!

Sorry these go together 4 Bean Salad 1 can French cut green beans, drained 1 can cut yellow wax beans, drained 1 can garbanzo beans (chick peas), drained 1 can dark red kidney beans, drained and washed (or black beans, light kidney beans, red beans, etc, drained & washed) 1/2 Cup sliced vidalia onion (or other sweet onion) 1/3 Cup diced green pepper smallest jar or 1 heaping tbsp diced pimento Drain all of the above well. Use whatever bean combination of the 3 or 4 types that you wish. Dressing for beans Mix together & shake the following for the dressing: 3/4 Cup cider vinegar 1/2 Cup vegetable oil (or olive oil) 3/4 Cup sugar 1/2 tsp salt 1/2 tsp freshly ground pepper Combine the your combination of vegetables with the vinegar & oil mixture. Marinate in refrigerator for several hours, or overnight. This will hold up very well on an outdoor buffet, but is best if you can keep it chilled by putting in a small bowl, and nest that over a larger bowl filled with crushed ice and a small amount of water! Enjoy!

BARBECUED BEANS
1/4 cup ketchup 3/4 cup water 1 tsp. vinegar 1 T. brown sugar salt, celery salt and onion salt to taste 1-28 oz. can of port and beans, drained
Preheat over to 300 degrees. Mix all ingredients well and pour into a casserole dish. Bake 1 hour.

German Potato Salad 4 cups cubed peeled potato 4 slices bacon, diced 1/2 cup chopped onion 1/2 cup chopped green pepper 2 TBS Pimento peppers ,Bottled is fine 2 eggs, beaten 1/4 cup sugar 1/4 cup vinegar 1/4 teaspoon pepper 2 hard-cooked egg, sliced Cook potatoes in a covered saucepan in an inch of boiling salted water until tender, about 20 minutes. Drain. In a large skillet,sauté bacon until almost crisp. Add onion, pimento and green pepper; cook 3 minutes longer. Combine beaten eggs with vinegar, sugar, and pepper; mix to blend well. Gradually add egg mixture to the bacon mixture, stirring and cooking until mixture thickens. Remove from heat and toss gently with potatoes. Spoon salad into a serving dish and garnish with sliced eggs. thanks a lot, i like the cuke and red wine vinegar idea, great to give the taste buds a lift and so different from the turkey, good combination, thanks again

Vinegar stuff travels good to. Cut up some cucumbers, red onions and tomatoes and put in some red wine vinegar, sugar and salt and pepper.

Honestly if you put it in a good cooler with ice it will travel fine, especially to Ashe County. You can take stuff for miles in a cooler and it do fine. If you are still afraid to travel with mayo you might want to make salads and use Italian dressing in them. It doesn't spoil as fast. You can make a pasta salad or maybe with it. There are some recipes on here.

ANY SUGGESTIONS OR RECIPES OR IDEAS FOR FOOD THAT TRAVELS WELL. I AM HEADED TOWARD ASHE COUNTY SOON AND WANT TO BRING A PICNIC WITH ME. I AM ESPECIALLY LOOKING FOR A SALAD RECIPE OR SOMETHING THAT TRAVELS WELL. I REALIZE MAYO DONT TRAVEL WELL. MEAT IS NO PROBLEM, HECK TURKEY BREAST OFF THE BONE TRAVELS REALLY WELL AND THAT IS PART OF THE MENU BUT I NEED SOMETHING IN THE SALAD LINE. THANKS
