fine friends cornbread salad...

Tennessee Cornbread Salad Recipe
1 pkg. Buttermilk cornbread mix (6 oz.)-Martha White brand
12 slices bacon
3 cups chopped tomatoes
1 cup chopped green bell pepper
1 cup chopped onion
1/2 cup chopped sweet pickle
1/4 cup reserved pickle juice
1 cup mayonaise

Prepare and bake cornbread per instructions.

In a large skillet, cook bacon over medium heat until crisp. Drain on paper towels. Crumble.

Crumble 1/2 of the cornbread into the bottom of a large serving bowl. In another bowl, combine tomatoes, pepper, onions, pickles and bacon, mix well. Spoon half of veggie mix over cornbread.

In a small bowl, combine mayo, and pickle juice. Mix well. Spread 1/2 of mixture over veggies. Repeat layering with remaining cornbread, veggies, and dressing. Cover tightly, refrigerate 2-3 hours before serving. Serves 8

go on line and put in tennessee corn bread salad , it's the best i'v found yet, but don't use sweet pickle juice use dill pickle juice, in the mayonaise dressing . you can use celery in it too.

was at food lion today and checked out the deli section

got the visual on it now

i can only imagine what i would have made if i didn't ask. i think it would have been some solid brick of "something"

Jabber if you shop at Food lion they sell the salad in the deli .They make it fresh daily.It stays kinda of chunky,crumbly .LOL

this is something totally new to me. when you use the ranch dressing til it sticks together ... how is it eaten? is it kind of solid and sliced or is it still crumbly? sounds great but i have never seen it or eaten it.

It was at surry Community College while I was finishing my bsn. Now you have made me realize it was a different salad. I had a wired jaw for twelve weeks and loved those two salads. Can you post or pm me the broccoli salad recipe daddyp?

Can you tell me what SCC stands for? I am sure it's something I should know but I don't. If your talking about the same thing I am thinking it is a kind of brocolli salad? The first place I ever remember having it was back when one of the best buffets ever was in Wilkes....Happyi'sGourmet. It was right where the Carousel is now and Teresa was a waitress there. She has the same broccoli on her salad bar, but it's not quite as good as the original. It seems to have cheese, mayo, sugar and ham in it? Ruby Tuesday has something similar on theirs and you can buy it in Lowes Deli. I think I have a recipe for it in one of my county cook books. If that's what your talking about let me know and I can look it up. There is also a great broc salad that has raisins, mayo, sugar and sunflower seeds in it.

Is there a recipe that has small cut up broccoli florets in it? I was thinking that SCC makes it that way.

Sorry that is so jumbled. I tried copying it from an old post I made. Let me try to fix it.

here is the recipe I have used. It tastes just like Fine Friends and what Doc's was like years ago. I use white cornbread mix. If you like the sweet use yellow.Cornbread Salad1 box Jiffy Cornbread mix, baked and crumbled

6 oz cooked bacon, crumbled

2 medium tomatoes, finely diced

2 medium onions, finely diced

1 medium green pepper, finely diced

1 can of corn, drained

Ranch dressing (I usually just mix a little in and see if it is wet enough to stick together)Mix all ingredients together. Refrigerate

here is the recipe I have used. It tastes just like Fine Friends and what Doc's was like years ago. I use white cornbread mix. If you like the sweet use yellow. Doc's has more of the sweet taste since they use yellow cornbread. You can also do this layered instead of mixed up but Fine Friends and Doc's does it mixed. I like it like Fine Friends. Serve with an ice cream scoop. PS I always ask this when someone asks for this recipe...does anyone have the Scottish Totties recipe. I have never got the right recipe but I am hoping one day someone will know it.
