Faye Runion's Red Velvet Cake

I would like to have Faye's plain birthday cake and icing recipe if your mother doesn't mind.

My mother has several of Faye's recipes. She said to tell you all that she has felt guilty for not being able to get this to you this week due to being computer illiterate. She hasn't learned how to post yet and had to wait on me to do it. So here it is.

Faye's Red Velvet Cake

2 1/2 cups self-rising flour
1 1/2 cups sugar
1 cup Wesson oil
1 teaspoon soda
2 eggs
1 cup buttermilk
1 teaspoon vinegar
1 ounce red food coloring
1 teaspoon vanilla
* Note there is NO cocoa in this recipe. Mom said it must not have needed it, but you can add it if you want.

Mix sugar and oil. Add eggs and beat after each addition. Add vinegar. Mix soda with flour, and add alternately with buttermilk. Add vanilla and food coloring. Bake in two eight-inch cake pans at 350 degrees for 25 to 30 minutes.

Icing
8 ounce cream cheese
1 stick margarine
1 box confectioners' sugar
1 teaspoon vanilla
1 cup chopped pecans

Cream together cream cheese and margarine. Add sugar, nuts and vanilla. Mix well.

Mom has other recipes of Faye's if you are looking for anything else. Mom is the recipe queen and I'm typing this while sitting in her office which has a wall of cook books.

my mom used to get my Birthday cakes from Faye and it was usually Red Velvet. I know that it was made from scratch...no boxed cake mixes or boxed pudding mixes and it had buttermilk and vinegar in the recipe. I will see if mom every got the recipe.

I don't know what kinda cake she had but this red velvet cake is good.


1 box white cake mix


1 box instant chocolate pudding mix


2 cups milk


2 eggs


1 bottle red food coloring


¼ cup oil


1 teaspoon of baking soda


1 tablespoon vinegar


Combine first 6 ingredients in a bowl in order given; mixing well.


Dissolve soda in vinegar and add to batter, mixing well.


Pour into 3 prepared round cake pans.


Bake @ 350 for 18-20 minutes or until cake tests done.


Cool before frosting


Frosting:


1 stick butter, softened


1 large 8oz package of cream cheese, softened


1 box powdered sugar


1 teaspoon vanilla extract


Cream butter and cream cheese in a bowl until fluffy. Add powdered sugar gradually.


Beating until smooth and creamy. Stir in vanilla. Spread between layers and over top of sides after the cake is cooled.
