Favorite Zucchini or Squash Bread Recipes?

Squash Fritters
2 cups yellow or zucchini squash, grated
1/4 cup onion, chopped
1/2 teaspoon salt
pepper to taste
6 tablespoons self-rising flour
2 eggs beaten
2 tablespoons margarine, melted
1/4 cup vegetable oil for cooking
Mix together squash, onions, salt, pepper, and flour. Add eggs and margarine, and mix thoroughly. Heat oil in skillet. Drop by teaspoonfuls into skillet and saute until brown on both sides. Drain on paper towels before serving.

Wash and cut off both ends of squash or zucchini. Slice long way, 1/2" thick, Place on aluminum foil. Sprinkle with garlic salt and Lowrey's Seasoning,
Dilute 2 tbsp Lowrey's Sweet and Sour Sczechuan sauce with 1 tbsp water. Brush over top of squash. If any left then drizzle over squash.
Fold over foil and place on 350 grill.
After 20 minutes, or just 10 minutes longer (enough thiem to finish the foil wrapped corn on the cob that you will just naturally want to prepare to go with this squash0 uncover the squash and let brown a little.
Delicious..

Simply shred squash or zucchini for 3 packed cups, Add 1 can of either cream of mushroom, cream of celery, or cream of chicken soup, or canned chicken or turkey gravy to mixture, Add 1 large bag Pepperidge Corn Bread Stuffing Mix, Melt and add 1 stick margarine or butter, Chop and add 2 stalks of celery, Chop or coursely diced onion (any kind other than purple), Add 1 tsp each salt, pepper, Mix all ingredients together and place in a lined, sprayed with Pam, 9 x 14 sheet cake pan. Cover pan with aluminum foil,
Bake for 45 to 60 minutes at 360.
Delicious.

No no chocolate but the Splenda recipe we made and just put walnuts in it and it was great.Didn't have raisins .I use a old timey box grater and spoon out the seeds and it works great on the Zucchini.
Bread recipes are great way of getting rid of overgrown veggies.They make good bread,just wash, spoon out seeds and grate.

Sounds good bushman. I will have to try that! I've tried several of your recipes and really liked them. Have you ever made chocolate zucchini bread?

Zucchini Bread (The Best Ever!) 2 c all-purpose flour 1-1/2 ts salt 3 ts cinnamon 1 ts baking soda 1/2 ts baking powder 1 c oil 3 eggs 1 ts vanilla 1-1/2 c sugar 3 c shredded zucchini 1/2 c chopped walnuts 1/2 c raisins Preheat oven to 350°F. Grease two small loaf pans. Sift together flour, salt, cinnamon, baking soda, baking powder. In a large bowl whisk together oil, eggs, vanilla, sugar. Stir in flour mixture and remaining ingredients. Divide into prepared pans. Bake at 350 ºfor 55-60 minutes or until cake tester comes out clean. Cool on wire racks to room temperature
Splenda Zucchini Bread 3 cups Zucchini 1 2/3 cups splenda 2/3 cup applesauce or (oil) 2 teaspoons vanilla 4 eggs 3 cups flour 2 teaspoons soda 1 teaspoons salt 3 teaspoons cinnamon 1/2 teaspoons cloves 1/2 teaspoons baking powder 1 cup nuts 1 cup raisins Mix up the sugar, oil, vanilla and eggs well and add Zucchini and beat well. Then add flour and spices and mix up good. Then add nuts and raisans and pour into greased pans. Makes two loaves 8 1/2 x 4 1/2 x 2 1/2 size pans
Bake at 350 º for 1 hour
