If you're short of prep time, put cut up chicken or chicken breast in pot and pour one bottle of BBQ sauce over it. Let cook on low all day.

Thanks SteeldMagnolia! I'll have to try both of those recipes. They both sound really good. I love rice dishes w/ veggies; so, it really helps to know when you put in your rice.

Swimgal for Chicken Rice and Veggies....
What i do is put the chicken in the crockpot with a can of cream of mushroom and garlic or cream of chicken and herbs soup with only half a can of water. Turn the heat setting to high until the pot gets hot then turn to low and let cook until the chicken just starts to fall off the bone then remove the bones. (or you can use boneless chicken breast)
then i put in broccoli florets and green beans.... if frozen let them thaw before putting in the pot ....let cook for another 30 mins and then add a 1/2 c of Minute rice for each piece of chicken. Rice should be tender in about 10 mins.
sometimes i just add a can of green peas and the rice at the same time.
Anytime you are cooking veggies in the crock pot .... you want to add them after the meat is done or almost done. If you add them at the beginning, they will over cook and turn to mush. The only exception is raw carrots and potatoes when making beef stew.

I just made BBQ Ribs in the crock pot. If you like ribs these are easy and really good.
Pork Ribs & Favorite BBQ Sauce
Cut your ribs to fit your crock pot. Boil them on the stove for 15 to 20 minutes until they are grayish (no pink). Spray your crock pot w/ a cooking spray (I use Olive Oil Spray). Pour a small amount of BBQ Sauce in the bottom of the Crock Pot. Layer your ribs w/ BBQ Sauce between each layer pouring any excess sauce on top. Cover and cook on high for 6 hours. Always keep an eye on them to make sure they aren't over cooking towards the end. They will literally fall off the bone.
