I slice the eggplant in rounds it fits in my round casserole better. I have only used the purple so far.

bazay...that is the way to cook. i love egg plant but had not been able to find a really simple recipe for it. this sounds so good

next question...is there a difference in the tastes and texture between whte and purple eggplant? which is better?

Do you slice the eggplant from the top or side? Round or ovals?

Eggplant Parmagian

one egglplant
egg - beaten can add any spice you like
stewed tomatoes
mozzerello cheese

cut eggplant in 1/4 to 1/2 slices dip in beaten egg mixture, fry to golden brown. in casserole layer eggplant, tomatoes, cheese repeat til eggplant gone. Bake 350 F about 45 min.

sorry for spelling its late my family really enjoyed this recipe, its easy and they really didnt know they were eating a veggie.

we would slice it drat through milk &eggs. then bread it seasoeed like it anf deep fry. realgood
