NON-ALCOHOLIC EGG NOG

Ingredients


16 ounces Egg Beaters or equivalent in raw eggs

1 cup sugar

4 cups milk

2 cups half and half

3 tsp real vanilla

1 to 2 tsp rum flavoring extract

1/4 tsp salt

1/4 tsp nutmeg


Directions


Mix all ingredients in blender or Cuisinart until frothy. Use an egg beater if you must.


Cover and chill.


Make ahead of serving and refrigerate at once until chilled and until serving time.


Makes 12 servings.

NON-ALCOHOLIC CHOCOLATE EGG NOG

Ingredients


1 package diet cocoa mix, Swiss Miss, Nestles, etc.


5 cups vanilla flavored Almond Milk (Silk or Diamond--I like Diamond the best.) You may substitute with Silk Vanilla Soy milk. Persons who have had chemotherapy should not use soy milk.


1 sugar-free instant Jello chocolate pudding mix. If you can find dark chocolate pudding then use it instead of milk chocolate flavor.


1 tsp rum flavoring extract.


1/2 tsp ground cinnamon


1/4 tsp ground nutmeg.


Directions


Combine cocoa mix with 1/4 cup hot water. Stir to dissolve. Add 1 cup Almond milk and stir. Place in blender or cuisinart. Give a couple of pulses to blend further.


Add remaining 4 cups Almond Milk and all other ingredients to blender/Cuisinart. Blend on high speed until smooth and uniform. Refrigerate in covered container for a few hours to allow nog to thicken.


Serve each cup of nog with a squirt of whipped cream and a dash of either cinnamon or nutmeg. Go light on the nutmeg. A little goes a long way.


Makes 5 servings.
