Easy Weight Watching Banana Bread

Loaf is calculated to yield 1 point, 78 cal per svg, 5% carbohydrate. Calculation does not include applesauce because it may be unsweetened, naturally sweetened (with white grape or pear juice), or corn sweetener. You would have to determine that from the label from which you obtained the apple sauce. Good Luck. If you add nuts you would have to add those too.

We've got 2 large bananas left over and they're getting overripe so I'm going to make some weight watching banana bread tonight for breakfast/brunch in the morning.

bananas, mashed

1
cup Splenda sugar substitute

1/2
cup natural applesauce

3/4
cup all-purpose flour

1/2
cup whole wheat flour

1/2
teaspoon salt

1 1/2 teaspoons baking soda



Preheat oven to 350 degrees.


In a mixer, mash bananas, add Splenda and mix.
Mix in rest of ingredients. (add a couple of tablespoonsful of chopped pecans, walnuts, macadamias, currents, or raisins if you must have that extra "oomph,' but remember that they add calories and, in some cases, fats)
Pour ingredients into a bread pan sprayed with non-stick spray. (I use a Corning Pyrex loaf pan.)
Bake for 50 to 60 minutes; cake tester should come out clean when done.
Remove from pan and cool on a wire rack.
*If using a dark coated pan, bake at 325 degrees and bake a little longer; cake tester to should come out clean when done.
