This recipe is very quick & easy to make (found it in a Southern Living Slow Cooker Recipe cookbook):
“Baked” Potato Soup Slow Cooker Size: 5 quart Cook Time: 4 or 8 Hours Makes: Approx 12 cups Ingredients: 6 Large russet potatoes, peeled and cut into ½-inch cubes (uncooked) 1 large onion, chopped (approx 1 ½ cups) 3 (14 oz) cans chicken broth with roasted garlic ·Note: I could not find the broth with roasted garlic, so I used regular chicken broth and added a dash of garlic powder ¼ cup butter 2 ½ teaspoons salt 1 ¼ teaspoons freshly ground pepper 1 cup whipping cream or half-and-half 1 cup (4 oz) sharp cheddar cheese, shredded 3 Tbsp chopped fresh chives ·I was not crazy about this many chives. Next time I will cut this in half (at least). 1 (8 oz) container of sour cream (optional) 4 bacon slices, cooked & crumbled Shredded cheddar cheese Directions: Combine first 6 ingredients in a 5-quart slow cooker. Cover and cook on HIGH 4 hours, on LOW 8 hours or until potatoes are tender. Mash mixture until potatoes are coarsely chopped and soup is slightly thickened. Stir in whipping cream, cheddar cheese and chives. Top with sour cream (if desired) and sprinkle with bacon and cheddar cheese.

this is too funny, sent my younger brother to the grocery store and on my list i had 2 cans of cream. when he got there he called me and said----sis they dont have cream all they have is evaporated milk. i laughed out loud. remember i did say younger brother. when i was growing up all we ever called a can of evaporated milk was a can of cream. guess i am showing my age. i still substitue "cream" and water if i dont have any milk.

Do you like O'Charley's Loaded Potato Soup? It is one of my favorites. I cheat a little though. Last time I went there to eat I purchased a bag of their loaded potato soup mix to make at home. I use red potatoes sliced up then boil or microwave till the potatoes are soft. Drain the water and rinse the potato slices. Mix the soup mix w/ water and mix w/ a whisk until it is smooth (I only make a little at a time; so, I do it to taste depending on how strong of a flavor I want it to have). Add potatoes and microwave or simmer on the stove for a few minutes till the soup is as thick or thin as you prefer. Top w/ shredded cheese and bacon bits and serve. YUMMY!!
You can also google to find the recipe online; but, purchasing the mix is a lot easier.

What is Condensed Milk?
Is there a difference between just plain condensed milk and sweetened condensed milk?
Condensed milk could be a generic term for milk that has had 60% of its water removed by evaporation. With sweetened condensed milk, great quantities of sugar were added first, accounting for 40% to 45% of the total volume before evaporation. Once all that water is removed, it is a very sticky and very sweet mixture.
Unsweetened condensed milk, however, is simply called evaporated milk, at least in this country, and comes in whole, lowfat and skim versions.

Check again,. Condensed may be sweetened; however, it is not always. If sweetened the label states Sweetened Condensed Milk.

To goddess's receipe, I always add a can of condensed milk and one grated carrot, and 1/4 cup of butter. Makes it richer.
