Try dipping your chicken pieces in evaporated milk and then roll it in Corn Flake Crumbs. Bake in 375 degree oven for about 1 hour. Chicken very moist and crunchy.

I use Italian bread crumbs. First, I dip frozen, skinned breasts in buttermilk then roll in Italian Bread Crumbs. Then, lightly spray breasts with Pam and place, bone down, on foil lined pan. Lightly cover pan with foil and remove after 30 or so minutes in preheated oven at 375. Total cooking time is approximately 1 hour. Check temperature (careful not to touch bone or bottom of pan) to reach 185 to 190 degrees.

Excellent and absolutely moist and tender.

Have you tried the House of Autry's oven fried chicken coating mix? Takes the work out of pan frying. Also love the one for oven fried pork. My crowd likes it alot better than the Shake and Bake.

I am looking for a recipe for Oven Fried Chicken, cooking on the stove top takes to long and is just to messy, I just want something I can pop in the oven and have some good fried chicken.
